One of the things that I have missed since going Keto has been fried chicken. Tonight I found a simple solution and made a great dinner. (Even my chicken nugget aficionado, 6-year-old loved it).
This super easy recipe will have you licking your fingers (sorry Colonel) the rest of the evening.
Ingredients:
- 1 lb Thin-sliced boneless skinless chicken breast
(Cut into thirds) - 2 cups Almond flour
- 2 Eggs
- 1/4 cup grated parmesan cheese
- Salt, Pepper, Garlic powder to taste
- Olive oil
Preheat a large frying pan to medium-high. Cover the bottom with olive oil.
In a small mixing bowl, add eggs and whisk until uniform. In a medium mixing bowl add almond flour, parmesan, and seasoning. (Note: this recipe needs a little extra salt.)

Dip chicken chunks in the egg and thoroughly coat. Press chunks into the flour/cheese mixture until well coated, then place into the hot oil. Use tongs to flip them after two minutes, then cook (flipping occasionally) until the crust is a golden brown color.

Super simple, much healthier and virtually no carbs. Enjoy with your favorite sides.
